Hi all, I posted in the Roll Call section a pic of my picnic that I had cooked the other day. Here is my question about that "almost ruined" meal. I was of the thinking that I should bring it to 165 IT and then remove from the BGE, foil and put in ice chest for an hour or so. Not sure where I got that from, but that's what happened. I wasn't pleased with the results, but still tasted decent. Reading other posts since, how bad did I goof up eating that thing???

Basically I was looking to do something pork that I could slice up versus PP and that picnic looked like it would meet that. Hindsight, yeah won't use that hunk 'o meat again for that kinda meal!!

The temp was safe to eat, just not as tender as it would have been, had you taken it to 190. And you probity had more fat and such at that temp.
