I found this Great forum while researching the MES 30 and have been trolling the threads soaking up all the info I can.
Lots of good receipts and tips.
My friends and family consider me to be a Grill Master, but I know I have a long way to go ( I am my worse critic)
I do most of the cooking and always trying new twists to my meals,so I now use my "Big Red" for smoking every thing from
Tri Tip,Chicken, and all sorts of tasty critters.
I hope I can share my meager culinary skills with you all and I know I will be learning a whole lot from you guys/girls.
I am saving my pennies and dimes to get a certified, bonified smoker and the Mes 30 sounds right up my alley, set it forget it sounds great sometimes and then I may get one of the cheapo brinkman charcoal smokers for the times I want to baby sit my cooking.
Well enough for now, and in the spirit of sharing and giving, I would like to share my favorite Rub with you all:
[h2]PaPa's Stuff[/h2]
This of course is always adjustable to your own tastes and amount. I store mine in a empty oregano leaf shaker, the holes are just about right for the "stuff" to flow...Enjoy!
4- Tbs garlic powder
3- Tbs cayenne
2- Tbs thyme
5- Tbs Paprika
3-Tbs salt ( I use, sea salt)
2- Tbs Black pepper
3-Tbs onion powder
That's it folks, try it you'll like it.
