Welcome to the site! I have never tried the 3-2-1 but alot of fellows swear by it,

Welcome aboard, Dan!

For baby backs, many here use the 2-2-1 method.  For spareribs, many use the 3-2-1. These are not set in stone, they are just a guide to give you a starting point.  There are many variations.

Good luck and good smoking.

Yes, welcome!

I agree with Venture, 3-2-1 for Baby Backs is generally too long.

Good luck,

Curt.

Welcome Dan

You might try the 2 2 1 with baby backs.  I watch for them starting to dry out before I foil them  Once in the foil with moisture I check for when the bone starts getting loose in the socket  I like my ribs very tender, fall off the bone.  Take them out of the foil and throw back on the smoker or grill with some of your favorite sauce until the sauce thickens up the way you like and the ribs firm up a bit.   I think they are done when you can twist the bone and pull it out cleanly.  Others like it with a bit more pull

First off welcome to SMF there Dan. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.
