Well i am about to purchase the MES 40" from Sam's. I enjoy grilling and cooking but am new to smoking. Have always wanted to get into it but never have. I am in South Dakota so we'll see how this smoker holds up during the winter. Been reading a lot on the forum the last couple days and just joined today. There is a lot of great info on here and i can't wait to get started. Any beginner tips for the MES 40" or just smoking in general? I will be doing the 5 day training as well. Thanks everyone!

The MES is pretty much ready to go right out of the box. The main thing you will need is a reliable thermometer because the factory probe & the MES controller are never right. Maverick 732 would be my first choice. When you get the smoker put together you will want to season it. Just spray the inside with pam & set the controller to 275, put some wood chips in & let her smoke for a couple of hours. If yours came with the small chip drawer, then call Masterbuilt & they will send you out an upgrade for free. At some point you may want to get an A-MAZE-N smoke generator so you can get hours of smoke without adding chips every half hour. Good luck!

You will love the MES 40.  I have the AMNPS and it works great.  Durable and easy to use.  The Maverick 732 is great too.  They will hep guarantee your results.

Does anyone recommend a good smoking cookbook that includes recipes/smoker settings/etc? I see a lot of recipes on here but since im new im not sure what everyone is doing. Is it just assumed that if they are using a MES that they are using the heat deflector(tile)? Water or no water in the pan? wet or dry chips? this info seems to be missing from say the first dz recipes i read today. im not quite "in the know" yet....

First off welcome to SMF there Viskey. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.

Best tips I can give you is that if you are able store your Masterbuilt inside, you will get a longer, more reliable life out of it and the other is the A-MAZE-N smoker will provide continuous, quality smoke used with a Masterbuilt.
