Ok,  Butt's have been resting 2 hours, so it's pulling time.  Recruited a friend of my oldest daughter who is down from North Carolina for the holiday.  She has never smoked anything before so this was interesting to her.  I let her pull the last one while I took photos.  4 butts pulled and bagged. 

 

Now just waiting on the fatties to cook.  Did not get very fancy with the fatties as they basically like meat, cheese and bacon (and some requested no bacon and no spices, go figure).  Sorry, it was a mad house making 14 pounds of fatties up so I did not get any in progress photos of that. I'm running out of time with what I need to get done tonight so I had to improvise.

Well I started around 4:30PM yesterday and it's 10:50PM today and I'm done smoking.   Total tally was four 8 pound butts which went 22 hours and 12 pounds of fatty's.  Yep, I know I said I had 14 pounds, but I wanted to do them in batches on the top grate only as it's easier to keep track of how they are crisping up when they are near the edge, so I did two batches of 6 each.  Held the last two pounds in reserve as the youngest daughter's beau is coming in the day after Christmas and I'll smoke them while he's here.

 

No, cut up Q-view shots of the fatty's as they are going to be reheated and cut at work for lunch.  But here is the final batch just before coming off the smoker.

 

So after 30 hours of smoking you *KNOW* my porch smell's like a BBQ joint now!!!!

Office Party was at the local Sheriff's Office.  A horde of hungry Investigators snarffed all the pulled pork down, and most of the fatty's as well.  I think the pulled pork stuffed into home made yeast rolls filled them up fast.   Took about a day and a half to prep and smoke, but well worth it.

 

Totally forgot to take the camera...  oh well....

Glad it all turned out great!

 

My neighbor is a Yellowstone county sheriff, what a great guy! He is low man on the list so he has to work all the holidays, night shift, tonight too.

 

You don't give it much thought... the job the police and sheriff's do, until I see him driving out his driveway in his patrol car with the sun going down, reminds me of how easy a "regular" job is compared to what he deals with on a nightly basis.

 

I made him some snack stick vac pacs for Christmas, I know he will like them.

Snack sticks and "slim jim's" are a staple diet of road officers.  I used to keep some in the cruiser all the time when I worked morning shift (midnight to 8am).  After 33 years, I "retired" on a Friday and started back at the same job on Monday as a 38 hour a week "part time" employee.  That was last January. So I guess I'm semi-retired (but mostly just tired).
