I find that beef brisket tends to dry out and cooking it in the pan helps keep it moist.  Plus you have all the wonderful dripping for gravy.  I started smoking just tri tip because it has the layer of fat around it and is moister.  Smokin' Vegas

   Thanks Dave, I've never smoked in the pan before. This is new to me.

I'm trying to get the most tender juicy brisket possible.

I'm willing to sacrifice the bark for the tenderness and flavor.

 

The crispy bark would be great, just not sure how to get it and juicy brisket at the same time, but I'm working on it!

Finally!!................Dinner is done!

It was well worth the waitsausage.gif

 

 

No bark but very juicy, the Beef Stew seasoning worked out great.

I found I can get a smoke ring, smoke flavor and still be moist by cooking in a pan.

 

Even the wife said it's the best brisky yet! And you know what that means yahoo.gif

The Beef Stew seasoning gave it a nice beef flavor

I have never seen a better looking Brisket !

 

The burnt ends look perfect, and the plate is over the top!!! (perfect plate for a growing Bear)

 

And the BearView is Beautiful !!!

Thanks Frizzlefry, this is the only other pic I have of the Burnt ends.

It was dark so I couldn't get a pic of them on the grill.

They were great!
