Hello from MD

Hi all - I'm looking to buy a smoker soon and found this forum.  I live in Maryland now, but have also lived in Tennesee and Texas.

I'm quite a capable home cook, but have been disappointed by my ribs on the grill.  I want them to be perfect, and I think a smoker is the next step.  I'm a bit in "paralysis by analysis" mode as I contemplate all the different smoker types and models.  There's tons of great info here, but its somewhat overwhelming.  Any advice is very welcome.  I don't have a huge amount of outdoor space, so I don't want something huge.  I'm currently leaning towards the WSM, but yesterday I was thinking propane...

I'm making pulled pork next weekend (always comes out great just using indirect and a smoke box on my grill), but perhaps if I have a new smoker by then I'll do a side-by-side to compare.

This site has tons of info.

I would suggest you spend some time reading all the different forums and the WIKIs.

Then use the handy dandy search tool for specific interests!!

Take the awesome free E-Course!!!

Have a great day!!!

Welcome BC! I was a fellow Marylander until a couple of months ago when we moved into the District.

The WSM is a great choice, not only because it is fairly easy to operate and get consistent results from but also because it is highly efficient. It uses less fuel than most any other non-propane smoker.

I did pulled pork on a gas grill for a number of years. All I have to say is when you've done it over lump charcoal you won't ever turn back. It is fundamentally different.

FYI if you're anywhere near Alexandria, do a search on Craig's List for Weber Smokey Mountain. There is an appliance store there that sells them cheaper than anywhere and they advertise on CL.
