my serrano plant is full and the sun and heat are starting to cook them so i decided to make another batch.....

look ma, it's a mexican Xmas tree!

i like them as ripe as i can get them.....

i slice them for a quicker dry time and more smoke penetration...........

all trayed up.........

into the smoker with no heat (don't need it here) and i'll do 2 rounds of smoke using both of my amaze-n-smokers......

all done after about 32-35 hrs..........

these are great and this is a good way to preserve my chilis for future use like for my bacon cure and rubs.

thx for stoppin by...............

You are a dog!  The only red peppers I have are the sunburnt ones!

Good luck and good smoking.

Chef Rob, Morning. When you dry and smoke as you did here, what changes, if any, happen in the chili's heat level?

dave, i would have to say none. what capsaicin is in there will determine the heat of the chili.....i think the flavor intensifies like a sundried tomato but chili for chili i think the heat is constant. that being said, when grinding these you do use the seed pod as well as the ribs so you do get the full heat of the chili.

Your pepper plant? You must mean multiple plants cause mine never look like that. I wish I could walk out to something that beautiful. I'll have to try to smoke them when red ripe, I have never done that, thanks for the inspiration and GREAT GROW!
