Or "Aged" for some of us in the Know. I picked up a nice bone in Rib Eye roast, pre-cut, at Harveys on the way home from North Carolina. Since it is aged is in best to cook them up now or is possible to vacuum seal them for later?

Since you didn't get any responses I would say that since it's aged you would want to eat it fresh, but I don't see anything wrong with vacuum packing & freezing it. As far as vacuum packing & putting in the fridge, Pops or bbally would have to answer that one. I would think it would only be good for a few days in the fridge.

 No, it would be vacuumed packed and into the Freezer.  Of course I can always give it a good "smell" test once we thaw it out for the grill, when ready.
