Talk to us about the "drip pan" in the top of the smoker.... Is that where you have it when you are smoking meats?  What does it do for improving the smoke?

I just slip the bottom two grates, to either side of the top grate in my 30 and notch some oak dowels.sausage bars 001.jpg

Great info guys! I was just thinking of how to solve this problem yesterday. Local market has Boston Butts on sale and I now have 2 of them for my next day off. Was wondering how to make mods to my MES 30 for just this kind of thing. This site always comes through!
