Wow joel i have been away a while, you sure have come a long way.  Looks great buddy.  Hope your doing well.


It is actually kind of amazing how it all just came together the last few weeks. If you look back at the pictures it seems like progress was slow at first but we were gathering material and making design decisions. Once all of that was done it went quickly. I am looking forward to hopefully getting a little bit of my weekends back so I can finish the dry curing chamber. Hope you are well Mike.


Dang!  I just checked my schedule and I'm working at the fire station on the 24th.  That's also the weekend before we go to Disney for 2 weeks, so my vacation is about shot.  Be sure to take lot's of pics!

That beast is looking great. Amazing what a coat of paint can do.
It really is. The only way I can say it is that it makes the smoker look professional as opposed to the bucket of scrap that we all know it is.

I think we all are in awe of what we have built. It definitely came out on the high side of my expectations. Thanks for the luck Dave! I have been making gallons of sauce the last few days. Gotta get the rub mixed up tonight along with my sausage seasonings. Tomorrow is sausage making day and Friday we start cooking.

I've been following this thread for months.  Everything looks great, especially now with the fresh coat of paint.  Can't wait to see what you crank out this weekend!  Good luck and continue the great work.

I was just looking through the pics my wife snapped this weekend and no good ones so I am swiping a couple that another friend posted.

Some briskets, sirloin tip roasts and homemade kielbasa.

Up top is spicy pork caramel candy. Middle row is kielbasa, whole chicken and behind them are some wild boar and venison shoulders, on the bottom are boston butt and full pork shoulders.

I was a little (a lot!) busy so I didn't have any time to shoot any pics but based on everyone around me I know there are quite a few. As I stumble across more pics I will post them.

Suffice to say the first cook came out great and we are under way. We will have to make some process changes for the festival but I learned a lot with this first cook. The warming box worked out great too!
 
Just like our seasoning runs, it took a single split every 20 - 30 minutes. Luckily we got hooked up with a local hickory supplier for the Lexington, NC BBQ joints and it only cost us $50 for an extended bed pickup load. We used about 1/4 of it. I ran the smoker for about 30 hours.

Thats awesome that you were able to use that little word for that big of a smoker. Great job.

Nice work brother!!!!!    Sucker is really starting to shine like a diamond.

Not sure what the plans are for the trailer axles but I fell in love with um as soon as I say that pic.

I would build my frame, beef up the frame on the axles then marry the two just like the big rig trailers are built. So that you can slide the axles forward and back if needed.

Never know when someone is gonna come up with a killer deal, and cause the trailer to have a weight problem. Been there done that. Wish I could have slid my axle vs building a new 5 foot tongue. 

One of these days I will have to sneak back in here and update my build thread. Just hasnt been alot happen to it as far as the smoker goes.

Thanks Dan! I think we are in good shape for the festival. I learned a lot from this weekend.

Btw, check out wittdogs "Grandpa Jumbos Polish Sausage" at the other place you and I frequent. Use the smoke version but add 2 TBS mustard seed and change 2 TBS garlic to 4 TBS fresh minced garlic. It is the best polish sausage I have made to date.

A friend of a friend that is a blacksmith came by on Saturday to sample the Q and he had a great idea and that was to build the frame to the smoker and then back the trailer into it like the garbage people do for a dumpster. Our plan all along had been to use u-bolts to be able to adjust the trailer on the axles to get the right weight balance but being able to dump the trailer from the axles is just entirely too brilliant to let go of.

Update your build thread brother. I want to see what you are doing these days.

No doubt. We have less than three weeks to get it done but I think we are going to do well. I also can't wait to back this beast into the driveway and smoke all day to the chagrin of my neighbors. lol

I honestly was shocked at how little wood we consumed Brian. The firebox is all 3/8" metal as is the smoke chamber and I think that has a lot to do with it. It may take an hour to get up to temp but once she is there she stays there.

It definitely was a holy smoke JJ. A friend of a friend of a friend had invited this entire company of Lexington style pit builders to come over to put us in our place and those guys told me they had never had pulled pork as tasty as what we put out. Everything turned out great which was a huge shock to me. I expected a transplanted yankee such as myself to be put in my place but it never happened.

Can't wait to see more pix. It looks incredible. Quite the feast there. I hope to make it to the fair and see it in action. How was the temp distribution?
It was dead even from end to end. Apparently a few people enjoyed it because I started getting emails from friends about catering jobs today.
