First ribs on the new WSM 22.5

We'll today was the first smoke on my new WSM, and let me tell ya I LOVE IT. I should have bought one of these a long time ago. It was only 18 degrees out today so I was a little scared to even try it for the first time, but I went for it anyways.  I threw on some ribs, chicken wings, and some wicked beans. As cold as it was it held a rock solid temp for 7 hours until I shut it down. So here is some food porn for ya.

Just getting started

chuggin right along, more steam than smoke, very cold out

Wings off the smoker first

After 3 hours the beans are done

Not the best looking ribs but they was awesome, could have trimmed them a little better

Extra skirt trimmings cut up and frozen for the next batch of beans

You are so right Al, the wsm amazes me. I was so surprised at how quickly the temps recovered after taking the lid off, and how steady of a temp that thing holds. they was some of the best ribs I've done yet. Thanks every body

So here is a question for you. Does smoking the beams really make a difference in the taste??

Yes it does give it a great flavor, since I done it for the first time that's the only way I fix them unless I'm short on time

Same here, can't eat beans if there not smoked!

I figured you'd still have some. We got 42" here in the last 6 storms, and I think there's still almost 2' left on the ground.

We only had about 10" here, but I have a cabin up in the mountains and they got about 4 feet up there, so I won't be doing any trout fishing up there for a while

Yepper everything looks good to me. Now it's not 18° outside but maybe 60° today and I have been smoking my big butt off today too.
