    Why do my ribs suck!

    As a complete newbie to smoking meat, can someone verify what 3-2-1 and 2-2-1 is. Is that 3 hours unwrapped, 2 hours wrapped, and 1 hour unwrapped, and of course the same for 2-2-1? If not, please let me know. Thanks everyone!

    I used my new Brinkmann Vertical Charcoal Smoker I used applewood to smoke, and apple juice and water in the water pan.     So I broke in my new smoker today and had my first smoke, chicken thighs. Yesterday, I rubbed them with a bunch of seasonings (paprika, onion powder, garlic powder, s & p, weber kick'n chicken)...
