Well, getting ready to fire the old Joe off again, feeling good about things. Smoking 20 lbs for a 3pm eat time. No pics of the food. But the boys and I got the grill ready.

Hahaha. I did it again didn't I lol.
It ended up turning out fine. Actually it ended up being the best pork I've ever smoked. Juiciest, savory etc. It was weird.
So what I did was throw it in the oven, wrapped of course and put the oven on its lowest setting. 170*.
So it went it at 189...

Thinking I have a problem now though lol.
It's gonna be cooked long before it's time to eat. I way over estimated the cooking time this time.
It's at 189* right now, it's 10am here and dinner is at 5pm! Lol
I've let them rest for around 2 hours wrapped in blankets before...
Had to say goodbye to my old char griller. Such a shame. Got me a new lowes special in thr Oklahoma Joe's special.
Here is my first smoke with no mods yet. Just foil around the leaky openings, which didn't require alot.

Thanks man, ill be sure to post some picks of the cuts when i unwrap it. Its been wrapped on the counter for about 45 mintues now. Its gonna end up resting about 2.5 hours as I last minute threw some ribs in and they wont be done for about 30 minutes later after a 2 hour rest on the brisket. ...
I'm going to wrap this thing soon and transfer to oven to finish off. Was thinking off putting some beef broth and a little shake rub in the wrap with the meat. Thoughts?
Thanks guys. I got a tip last night from an old,neighbor to use worsetrchire sauce as well... I should've checked this. I did use a tablespoon of Brown sugar in my rub. But the rest was what was posted. I hope it turns out good.

Well I bought 3 briskets. 2 from a butcher and one, from Kroger. I'm going cook the Kroger one first to learn on lol. ...grill is cleaned and ready. Woot.
Any last minute tips? I was just gonna run with a basic rub, salt, pepper, garlic little cayenne and a touch of dark Brown sugar. No...
