    Ceramic smokers...esp the bayou classic

    Okay so my $89 Charbroil sidecar has about 80 hours of smoke time since we bought it in May.  Its pretty beat.  The charcoal/food grates in both pits are rusted, the sidecar is rusted bad and the underside is chalky white, and i'm pretty sure the therm is losing accuracy.  Sure I could scrape it...

    So my bro beat me to the punch on the first smoked chickens.  These were a pair of 4 pounders he did with no brine, and a brown sugar heavy rub.  He did them 4 hrs up to 180 with mostly cherry smoke and a little mesquite.  They were AMAZING for our first birds.  We saved the juices to make gravy...
