    Keeping AMNPS going

I got some great tips from the AMNPS customer service which should help in addition to the excellent advice here. Thanks again.

    Keeping AMNPS going

Thanks Dave. I've just been sanitizing it after smoking, but I suppose there wouldn't be harm in running it up high for a while beforehand too, so that might be a good route to take.

Great, thanks for the additional info. It probably doesn't help on humid mornings like today either.

    Keeping AMNPS going

Today was a struggle, but finally have good thin blue smoke. First attempt never gave good smoke, but wound up flaming across the top of the entire tray, and I couldn't put it out. However, I was trying a mix of apple and pecan pellets, so maybe one was drier than the other and took more heat...

    Keeping AMNPS going

Thanks. I hadn't thought of heating the AMNPS, duh :-). Will try next time. Just seems like each time has gotten tougher for some reason.

    Keeping AMNPS going

Hello,  I love the product, but often have difficulty getting it to continue smoking after it is started. It usually takes several re-lights after it is first going and placed into my MES 30". I've thought about maybe baking/drying the pellets in the oven for a little while first or even putting...

Finally did my first brisket, so glad this forum exists

I've done ribs, pork shoulder, and chicken in my MES, but had not yet attempted a brisket, until yesterday. I read through the few cookbooks I have, and spent quite a bit of time reading various posts on here to get an idea of what would work best for my first attempt. I think the research paid...

First Real Use of My New MES 30

Thanks. Yeah, the bark was good, and there are some good bits mixed in with the meat (just didn't show in that photo). It obviously softened after foiling, but still real tasty.

First Real Use of My New MES 30

That's a good idea, and I may try that next time around. I also like a nice pull, maybe more than some people, so these were about right for me (but what you mention would likely be a nice compromise for everyone). I just pulled the second butt and put a qview of that above in the original...

First Real Use of My New MES 30

Everything turned out well, the butts in particular were awesome. Unfortunately it got hectic while I was pulling with guests arriving, so I didn't get any pictures of the final product . We finished most of one butt, but the other was untouched, so we'll have leftovers for a while (will...

First Real Use of My New MES 30

Thanks, what you say makes total sense, and I'm betting with time I'll get away from even spritzing the ribs. Maybe I'll try the 3-2-1 at some point, but that seems like a lot of trouble to get something I'm not the biggest fan of ("fall off the bone"). I'm still being biased by my previous...

First Real Use of My New MES 30

Thanks, I'm just hoping my first big smoke goes ok, especially since it's all for a party/guests. I'll update the thread with some QView when things are done, for better or worse
