    Pork Butt for the 4th

    Happy 4th Gary !  A question....do you inject your pork butts and when you are smoking at 225...do you  spritz with apple juice or similar at any time? Thanks

    Pork Butt question

    Myron Mixon and many others recommend that a pork butt should be injected before smoking. Is it necessary to do this? I thought the butt was heavily marbled and would probably stand (no pun intended) on its own. What do you think?  Thanks

    Hey folks.....I want to do my first brisket in a WSM 18.5. The problem is, the briskets that are available, are too big to fit into the smoker (Lengthwise)....is it all right to cut the brisket in half (Freeze the other half) to make it fit or is that a Smoker sacrilege? Thanks

    OK...Thanks...I'll look into the Mavericks and from what everybody else is saying, the Thermopen is also an invaluable tool. Probably end up getting both of those.      Now, anyone have any recommendations on what type of charcoal works best in a WSM???

    Hi Folks....another question for you. Is the grill thermometer that is installed on the WSM lid sufficient or should I get another one to put inside? If so, any recommendations? Lastly, what type of charcoal should I use in the WSM?   Thanks

    Another question guys...I have not taken the WSM out of the box yet so I can still return it....should I have gotten the 22 inch instead of the 18.5? I don't mind cutting ribs in half to make them fit but what about a larger cut...like a brisket or something....I know the 22 is a hundred bucks...

    By the way ...to h2so4ca...I moved here (Arizona) about 2 years ago from the Seattle area...I lived in Arlington....prior to that in Oso.   Love the desert but I miss the trees; streams and mountains especially when it hits in the 100's here....
