    Cold Smoking

We thought it would be a fun thing to try. Opening 180 string cheeses, placing them on the grates, rotating them half way through, and finally, packaging them, nope, not fun...lol. I would advise, if you do them, only give them about 2 hours of smoke.

    Cold Smoking

I started smoking cheeses about a week after the pandemic hit, since I had nothing else really to do. Since then, I've really got into it big time. My last batch was 23 different cheeses, and about 140 pounds. I use the A-Maze-N tube, in my Masterbuilt propane unit. But, I'm considering...

That's what I'd already discussed with our owner...lol. I think I'll be fine with 4 bags, but I'll probably buy 6.

How much briquettes should I buy, for a 12 square foot cooking area, for a 6 hour BBQ?

I need help!? I'm a kitchen manager at a large restaurant in our town. I do a lot of BBQing and Smoking at home, but not at work. This weekend, we have an event that will be BBQ. I'll be using a charcoal BBQ with a 3'X4' cooking area. The event lasts 6 hours. I'll only be cooking...

Yes, I smoked them to about 210, rested them until about 170 and pulled.

Smoked Pork Butt, can I make it a ham?

It continued smoking, to become pulled pork. But I'm curious, you say "for safety sake..." I'm unsure what you mean. The butts were already above the minimum safe temperature for pork.

Smoked Pork Butt, can I make it a ham?

I'm currently smoking two pork butts, in an offset firebox smoker.  The internal temperature of the larger one just reached 170 degrees, when suddenly a thought hit me. "Why not remove the smaller one early, as a ham, instead of making it into pulled pork."  So I come to you with a question. ...

HAHA!  I also know Sara.  She's a great woman.  My daughter Madison, the one in my photo, got to meet her at the Big Horn Show a couple weeks ago and was pretty excited.  She made me take photos of the two of them together.
