I have a Smoke Hollow 38" vetical smoker (Model 38202G) . For years I had trouble keeping a stable temperature (usually too hot) but now it's suddenly too cool (like around 200F).
I was thinking of replacing the burner with a Bayou Classic SQ14 16-in Outdoor Patio Stove.
Thoughts?

When I bought my 38208G, I went ahead and bought a preassembled Bayou Classic 0-30 PSI Adjustible Regulator/Hose Assembly (), which has/a 3/8" inner diameter female fitting at the burner end. Apparently that's their standard fitting.
However, the Smoke Hollow has a visibly smaller fitting...
So my "farewell smoke" with my old Brinkmann gasser was a pork butt. It turned out well, but in trying to step up my game I had a strange situation.
I'd bought a Bayou Classic 5011 2-Ounce Stainless-Steel Seasoning Injector to inject the butt.
I mixed up a smaller batch of Mixon's pork...
