Do you mean convert a hand grinder to electric or make one completely from scratch? Easiest thing would be to get a #22 off eBay and hook a washing machine motor to it. Could use a jack shaft to get the rpm right if needed.
I liked it. Tasted kinda salty if you fry it til it's crisp. Fry it just a little bit and it tastes like a ham. Goes great on a burger tho. Got a belly in the freezer I'm gonna do next.
Here's a shot of my first try at some buckboard bacon. Used Tenderquick with brown sugar and some maple syrup thrown in. Can't really taste the maple tho.

So it's been a month and I'm still not "done". It's running though. Did some snack sticks after seasoning a bit.
That's the finished product minus some stain and spar.
