I received a new Masterbuilt XL propane smoker from my wife for Christmas. I already own an Orion outdoor cooker that does smoke but cooks more like a convection oven and a nice 4 burner gas grill that I use a wood chip box on one side to turn my pit into a smoker. My son and I put it together and cranked it and season it with some pecan that was from fallen branches in my yard. After several hours of seasoning it, it was time to put it to use. First load threw it some homemade sausage, pork tenderloin and a couple of whole chickens. I used some apple wood chips. Once this was complete. Cleaned out the wood tray and added a mixture of some mesquite and oak and threw in a nice 7 lb brisket. It must of been good as there were no left overs. My son is ready to make 50 lbs of sausage and smoke it. I told him hands off my Christmas present. Its going to be hard to keep him away from the smoker as he works in a butcher shop and can bring any cut of meat he wants home and he does like to cook and eat.
