what is this stuff

  1. going thru my spice box and i have 2 packs labled "cure". I believe they are from a high mountain kit. they call it cure and the hi mountain instructions say to measure it at 2 t pr pound....Its cream colored, not pink, and does not look like QT. Is there a use for this in curing, or should i pitch it and stick with insta-cure.

    If you don't know what is is it has no value to you.   It's not like trying to decide if the red stuff is cayanne or paprika.

    Not that it really matters now, but I did some hi mountain snacks sticks yesterday and that is definitely the cure supplied with their kits. I shore wouldn't try to substitute it for cure 1 though because you don't know how or what it comprised of
