We had prime rib today, for the first time in longer than I can remember. Rib eyes were on sale for $5.99 - I called and asked if he had any prime rib. Yeah he did, and said he'd have it ready for me after I got off work. Got to the store, and he had me an 11 lb. prime rib - at $5.99 a lb. Cut it in half today, and cooked part and froze the other part. Salt, pepper and a little garlic. Just a little bit of hickory. Cooked to 118 and let rest. Finished temp was right at 124. Absolutely delicious. Wife used aus jus and I had a horseradish sauce. Gnawed on one bone, and saved the rest for later!
