St. Louis Spares and Brisket

  1. Decided to fire up the chargriller outlaw and smoke some spares and a 5 lb brisket. Season up the meat, lit my chimneys and got the meat on the cooker at 1pm. I'm using Kingston competition blend charcoal. In the past I only used royal oak lump but wanted to try this stuff. So far it seems to be burning nicely. I'm at 275 very quickly.

  2. 1 hour into smoke. Spritzed w/ apple juice.

    Thin blue smoke. Peach splits smell great.

  4. 2 hours into smoke. Going to wrap ribs using mixture of bbq sauce, apple juice, and butter.
     
  5. 3hrs 45 min into cook. Brisket temp at 168. Going to wrap.

  8. Ribs done. Brisket at 190. Looking for 205.

    Looks great!

    Question I have is where did you get your charcoal box? I just put down some expanded metal in my SFB and it is awesome but I'm considering a basket.

    LMAO.....Dude, you got this wired now. Seems like only yesterday you were doing that first maiden smoke and now look at you! Absolutely all gorgeous looking....you seem to have that Outlaw tamed to suit your style. Slabs of ribs look perfect. Juicy looking, great smoke ring....got it all covered.
