My name is Jonathan

I was born and raised by BBQ people in Texas.  My grandfather owned and operated a BBQ business and food product business until he had a debilitating stroke in the 90s.  It was called Zebbie's, and it was most profitable with its Onion Ring batter mix.

My family has tons of smokers - all home-made - all weighing too much (offset smokers, rotisserie smokers, direct heat smokers,etc.).  I currently have the smallest one.  It is about 1,000 pounds.  The rest of them are on trailers or the like.  I have tons of experience catering and smoking for lots of people with my family.

That said, I know NOTHING about electric smoking except what I've learned through research on this forum. I got an Amaze N smoker to complement it.  It is sacrilegious that I even own an electric smoker.  My Paw-Paw would roll over in his grave if he knew. 

I am just having a hard time regulating temperature on my smoker in South Dakota cold temperatures without lots of work, and I am looking for a lazy man's way of smoking.

I love BBQ - ALL BBQ.  Kansas City, Memphis, Georgia, Texas... I love it all.  I prefer if it is a dead pig and that it is spicy, but I do not discriminate.

sioux falls sd here. i have a homemade smoker too. i havent done alot of smoking in cold weather but i have done some. i found that a fan unit really helps maintain some heat to your CC. i built my own pid unit for my first smoker and in the process of modifing it for this new smoker. if your close let me know id love to exchange ideas with you.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing

because their are so many different ways to make great Q...
