Guys, Gals,

We just got back from a trip to the Red River of the North in Fargo. Slaughtered the Cats. So I brought me about 8 home and thought I would smoke them up REAL TASTY! Anyhow, what I did was gut them, cut the heads off, tail them and defin them (except the dorsal).

Then I soaked them for a few days in a brine of 1 cup of Tender Quick and 1/2 cup of brown sugar. Right now I've got my make shift smoker fired up and they have been on there 30 minutes. It's a weber grill is all I have to smoke with currently so nothing is going to be phenominal but fell like me can't be picky.

I have attached a couple pics of the initial start right when I put them on. I'll post more throughout the day. I figure they will get good and dine because the fire is a bit hot. But we shall see.

Looking forward to an update, if it wasn't raining out I would either be cat fishing the Red today or dove hunitng.
 
I love catfish, but I've never had it smoked. What kind of wood flavoring are you using? I'll bet the catfish holds it's texture pretty well. Let us know how it comes out!
