So as we're wandering past the meat aisle of Costco, I noticed that they'd put up many packages of Rack of Pork for 2.99/lb wearing the Kirkland label, but you can see Swift elsewhere on the label. I'm sure they're available elsewhere for a lot less but, in this neck of the woods, it's considered a good deal. Snagged 3 packages (freezer is REALLY getting full), 8 ribs to the section. Now, I'm a stranger to Rack of Pork and I'm counting on SMF'ers to pass along some good ideas on how to serve these up right. I may just have to throw out some of the bread we've got in the freezer to make room for more Racks.
