I am pretty sure I am doing an 8.5lb prime rib on friday for a birthday gathering of mines and my wife's stepdad.  I will be using an ecb with some of the mods done on it.  Last time I used it my temp was around the 220 range, but all the other times the temp would be anywhere from 230 to 300 at times.  I have done research and have found it takes 30 mins to a hour per pound to cook.  We will be eating probably around 630pm or 7pm.

How long do you guys think it will take to cook it?  I am not sure how everyone who will be attending likes their meat done, so I am gonna shoot for medium doneness. Has anyone done one in an ecb before?  any tips for me besides overcooking it?  The prime rib didn't come out of my pocket so I don't want to mess it up.

Man I hope i get my sfb for my chargriller for my b-day.

Make sure you have a thermometer that has been checked and for med / med rare. i like 145 internal. I would take it to 135 foil and let sit in ice chest wrapped in towels for at least an hour .

Take it out slice and serve. if someone wants it a little more done , Put a little of the juice from the cooking in a skillet and pan sautee the prime to get rid of the red.
