I am from a little quiet townChebanse, Il. It's about an hour south of Chicago.
I have 2 GREAT Sons, Nate 24, and Nick 19.
We like hunting, fishing, and FOOTBALL. (GO BEARS)
I recently was given a Grillpro propane smoker. I have had smokers before, but they were all charcoal and being this close to the windy city made it a real pain to use them. I have the smoker going right now, and I still have to put up a wind-break, but at least with the propane it will be easier to hold the heat steady (Thanx Hank Hill).
Anyway, it's good to have a place that we can share ideas and even just visit.

I though it was called the windy city because of all the politicians?????? At least that is what someone told me. But what do I know. hahaha I have the same issue as you do. There are not trees here in ND and I always have to battle the wind. My smoke shack is tucked nicely behind the extension of third stall garage so I only have issues if there is a south wind. For my UDS I just bring it to where ever there isn't any wind which can be a problem some days. Some times I just have to smoke in my garage with the garage doors open. At least it gets me out of the wind.
 
No garage here, today I just opened up a cooler and stood it on end, so I had the ghetto look to it. Oh well, it worked.
Not over-joyed with the results.....I ran out of wood chips too soon and I had to take the cabbage out of the smoker before it was DONE. I put it right in the oven, but I'm afraid I took on some burnt wood taste.

I hope not, because I smoked 2 cabbages and was going to give one to a co-worker who was wanting to smoke one soon.

First off welcome Paul to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
