Hey all, I am from st. Charles MO. I just bought a 22 WSM. I have run it a few times. First pass 2 chickens, 5 pork steaks, and 2 dog pile sausage. Second run I did the thanksgiving turkey. I spatzcocked the bird and it was hands down the best turkey I have had on thanksgiving. The third run I did a pork butt. I am new to the world of smoking in a large smoker. I have a weber kettle with the rotisserie attachment and the spacer ring! Love it as well. I will probably mod that spacer to add another level for the WSM. Looking forward to picking up a few tricks. Happy smoking all.
