Hi everyone, My name is Rich. Im new here and new to smoking. I live up in Massachusetts. I built myself a nice UDS and have smoked chicken and brisket on it. The thing works great, I absolutely love it. But like a newb I was lighting my entire charcoal basket on fire and then trying to figure out why I couldn't control my temp. Then I read a thread on here about how you only light about a dozen or so coals and dump them into your basket. Is this the way, it seems more logical. Any tips for a new UDS man would be great.

Howdy again Rich and welcome again. you are referring to the Minion Method of starting your fire. Like you have read. I fill my basket with charcoal or lump with my wood chunks spread out. I then remove about a half of a chimney starter worth of fuel. Light it good and white, and replace said fuel from where I removed it in the basket. This way it will slowly light the other coals around it when the old coals ash out... producing a nice slow burn for some long hauls....

Welcome to the forums, Rich!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  Just ask when you need anything, and someone here will surely have the answer.
