looking to make sausages

i have had the itch to make my own sausage foe a while now but i was looking for advice. my budget is super tight right now and i need everything. should i buy manual grinder and stuffer or should i start with something else? any suggestions will be appreciated.
 
You can start by just grinding and making patties, while you figure out what flavors you like. It can even be just loose bulk for something like spaghetti sauce or for topping a pizza. I still haven't stuffed casings.

You can stuff sausages without a stuffer. Or you can make caseless.

For grinding a good manual grinder will cost $30-60. A cheaper option is to have the butcher where you buy the meat grind it for you. The butcher at my local grocery store does that for no additional charge.

Some traditional sausages like linguica were originally chopped not ground.

Save your money and buy a vertical stuffer. Then buy a grinder when you can.
 
Another option which I did until I am ready to buy a good grinder and stuffer, is if you have a kitchen aid mixer is to buy the grinder and stuffer attachments.  They are for low quantity production, but work very well.  I have had good luck with mine.

Well what ever you do and how you do it good luck - I like DS comment about the caseless ones and blue BW comment about just doing patties for the caseless ones try bears recipe it is great

you can do them make sure you get a good tested thermometer or if you want you can add some Liquid smoke and cook them in the oven at about 170 and you want the IT to get to 152
