Hey Everyone,
My name is Dave, I am 37 and from a suburb of Los Angeles. I have my own business doing business management and bookkeeping out here and spend most of my free time with my family nowadays.
I am a long time BBQer and have strictly used charcoal and wood (mostly mesquite with some occasional oak) in my BBQ. It is extremely frustrating loving natural grillin' and living in LA because it is near impossible to find some good equipment (in my experience).
Now, on to the important stuff, I FINALLY got my very first smoker (I have wanted one for nearly 20 years) about a month ago. I decided on a Masterbuilt 30" Electric Smoker (the one without the window). Now, I am sure some of you are saying, "but you said you are a strict charcoal and wood man", and you are 100% correct. However, after many discussions with longtime hunting, fishing and smoking friends of mine out in Utah, I came to the realization electric is just so much easier in the long run. It took me some time to make my peace with that, but I went electric and I will tell you all, I have not one regret at all!
For my rookie smoking, it wasn't even an option, it was always going to be BabyBacks (in reality loinbacks from Costco), they are my favorite and I have waited 20 years to make my own. I spend plenty of time scouring this AMAZING website and several others deciding on my methodology and what ingredients to go with. After driving myself slightly mad taking in everything I had read and deciding which to do, I ended up concocting my own recipe using a bit from everyones.
I have to tell you all, they came out far better than I could have ever hoped for to be honest, I was truly shocked as I wasn't sure what was coming out after 6 painstaking hours (purely because it was my first attempt, completely unguided). There is no ego in this at all, I am a rookie and have much to learn and try out to refine my recipes but that smoker is a bit magical! I am happy to share my recipe and method for anyone who is interested and have some awesome pics of those beautys.
Looking forward to learning everything I can from all of you and looking forward to posting some of my own success and failure stories as well.
