Kroger brand "moist n tender"

  1. Hello all, I was at the local grocery store around memorial day and they had pork butts and baby back ribs on sale for buy one get one free. These are kroger's brand and are "moist-n-tender. I am going to smoke the 2 racks of ribs tomorrow but I pulled them out of the wrapping tonight and they are already bending like they have been in the smoker for 2 hours! This is my first time buying this brand as I usually use a butcher or safeway brand. I have looked in the wiki's but I didn't have any luck on finding preps for it but I know I saw something on this "moist n tender" brand a while back. I thought I would give it a shot but I'm having serious doubts on it turning out normal. It's packed with 12 percent solution and I've towel dried as much as I can. Any advice would be greatly appreciated!

Being frozen and thawed is part of it, with a 12% solution injected is another part of it.  They still should cook up just fine, however.

A glass or two of Johnny Walker always makes the smoke go better!   [IMG]

I live less than a mile away from a krogers and buy the Moist and tender from time to time.  First the moist and Tender Pork Butts are very good.  The moist and tender spares are ok.  The Moist and tender baby backs taste like ham in my opinion.  They cook up just fine they just have a high salt content in them and if you are sensitive to salt you will taste it.  Most people can't tell the difference I am just not a big sat fan.

the 12% solution is a sodium based meat tenderizer.  Adjust ur seasoning so it contains less salt.  Salt draws moisture out ur product.
