I have an electric smoker, and 3, 1.4kg picnic shoulders. I was gonna marinate tonight in mustard and rub. And smoke tomorrow till 170°, then remove from smoker and wrap in foil with more rub, and throw in oven at 225° till the meat reaches 200-203°. Then wrap in new foil with some rub and beer, wrap in towel and put in cooler till family arrives. Is this a good idea? Haven't smoked a lot in my days! Help!

I'd foil a little sooner like at 160. And when done not sure about adding anything to it before I wrap in towel. Never heard of that being done but that doesn't mean it's wrong. Let's us know how it goes.
