North Texas
I want to say hello, just joined up here. I have been reading on the forums for the past week, and have gotten some awesome information. I finally figured I better join. To tell a little about myself, I live just north of the DFW metroplex in Texas. I am new to smoking myself. I have some family that does competition cooking, and I've gotten a few pointers, but I am as green as they come. I bought a Cajun Injector smoker, got it home and opened it up, and instantly boxed it up to take it back. Just didn't look like it was too well built. So I then bought a Masterbuilt 30 smoker (black with no window). I will have my first go at it this Wednesday, gonna try ribs and a pork butt. I will be ordering a Maverick ET-732 in the near future. Any tips or advice for my first smoke would be greatly appreciated!

Thanks!

Dave

  Looking forward to your participation!

First, welcome.  You've come to the right place to learn all about smoking.

You should sign up for the 5 Day eCourse offered on this forum, it's a good foundation as you get started.

For the first time smoker, there are lots of tips on the forum.

Depending on the ribs, I would do the 3-2-1 for spares (3 hours uncovered, 2 hours in foil then finish with 1 hour uncovered) or 2-2-1 for baby backs.  These times are a general guideline to work with.

For the butt, take it to 165F in the smoker, wrap in foil until you see 205F then wrap in towels for an hour or so in a cooler.  This is assuming you're looking for PP.  http://www.smokingmeatforums.com/t/57139/basic-pulled-pork-smoke

Good luck,

Curt.
