I've been reading here and ripping off tips, advice and reviews for around at least a year and a half now, figured it was time to join on in.
I've been using an offset for about 5 years and found a lot of very helpful stuff on the site as that unit is kind of a cheapy and it's right on the beach, so high winds nearly ALL the time. So temp regulation and other good tips have really helped. I'd give my success rate with that unit about a 80% in total, but nearly perfect since some early hiccups and since reading up here!
The home unit is a Masterbuilt XL propane and I've had it about a year. Done a load of ribs several times, beef and pork, plenty of chicken, sausages, salmon, bluefish, crab legs and whatever else I can put my hands on. We are currently devouring the remains of an 8 lb. pork butt, it's lasted about 2.5 days...
I worked many years as a cook and chef, so know my way around food, but smoking is of course a little different and a load of fun. I look forward to learning and growing the portfolio, so this seems the place to be.
