New lady on Discovery health made this. She baked it. I am going to smoke it. My wife has been kicking a$$ at loosing wieght so I thought I'd try this healthy version of meat loaf. Ingredients: olive oil spray 1 cup old fashioned oats 1 cup fat free milk 2 egg whites, lightly beaten 3 tablespoons Worcestershire sauce 1/2 cup minced red bell pepper 1/2 cup minced green bell pepper 1/3 cup minced whole green onion 1/2 cup finely chopped flat leaf parsley 1-2 tablespoons seeded, minced red jalapeno pepper, to taste 1-2 tablespoons seeded minced green jalapeno pepper, to taste 2 medium garlic clove, minced 1 teaspoon salt 1 pound 96 percent lean ground beef 1 pound lean ground pork 2/3 cup ketchup Think I am going to put a light coating of Jeff's rub on the outside. Only thing I am worried about is if it will stay together or not. I am going to use my grilling basket like I have seen others here do with a drip pan underneath. I may try to use a couple of tablespoons of the dripping to make a gravy. What do you all think?
