Friend Sticks

  1. I had a friend who wanted me to make him some snack sticks after trying mine. He settled on a Slim Jimish Type stick. He gave me the meat & even got me casings  [​IMG]   So here we go...


    5 lbs. of ground beef  [​IMG]


    Stuffer parts sanitized & drying while I mixed up the spices.


    Coming along nicely.


    And done...


    Meat ready to go.


    Spices mixed & ready to go.


    Everything mixed together really good & ready for the stuffer.


    Casing on tube & everything ready to go - using collagen for these...


    All stuffed & ready for the smoker.


    Closer look.


    And into the smoker they went for phase 1 which is 8 hours at 100AMNPS running oak for this phase.

    100* for 8 hrs huh? I might have to slow mine down and give that a try!

    I like the stuffing tube as well. Sticks look great!

  8. Thanks Dave  [​IMG]   I do the 100* for 8 hours on most recipes I use buttermilk in to give it time to work but I've done other sticks this way when using fruitwoods to give them some more time in the smoke.
     
  9. That actually came with my Cabelas grinder - never used it with it but it fits perfectly on the Weston stuffer & works great for sticks  [​IMG]

  11. Phase 1 complete. Now to bring the IT up to 148

    Looking really good Jeremy! Would your friend notice if a few of those sticks were missing? You could send them my way!

    Looks terrific. I would say you should get a 10% stick commission for doing the work.

    Here they are right out of the smoker.


    & in the water.


    Done & dry.

    Mmmm, tasty!!! Hoping to get one more smoke in as a bachelor. I know it isn't gonna be sticks!
