I made up some Pepper snack sticks last night using The SausageMakers Peppered Dried Sausage premix seasoning. the first time we tried this mix it was good but had no kick, so we added alittle red pepper flake this time. We started with 6.8 lb's of chuck in 19 mm colagen's, and ended up ten hours later with 4.6 lb's.. came out darn good, if I say so myself.

One thing I did notice is I got to work on my pic's skill's, they actually look better then the pic's.
