My grandmother passed away on Saturday, 95 years strong. :77: The funeral is tomorrow. Afterwards there will be a huge meal. I'm not technically supposed to be cooking anything because I'm immediate family. But I think my grandmother would rather have me smoke some brisket than to let everyone else eat substandard food. So I picked up a pair of prime packers from Costco, 12.73lbs and 11.93lbs. Put them on just after 8pm, with hickory mini splits and oak lump charcoal. I'm supplementing this smoke with the charcoal this time to help keep the temps up, stretch my hickory supply and power through the stall. Hopefully I can get these done in about 12 hours, then wrap them in towels, blankets and pack in an ice chest to hold for about 5 hours until we eat at around 1pm on Tuesday. There could be over 100 people at the dinner, so my two briskets won't last long. Clearly, this is as much as I can get on my little Chargriller at one time. I keep telling my wife that I need a new (i.e. bigger) smoker. What happened to the picture attachment function?.
