    just a tease.......just taken this outta dry brine.....soaked, and dryed.......getting ready to put in fridge to get that permiculat.......or what ever its called........

    will post all the pics, along with cheese and abts doing tomorrow

    the loin will be rolled in resturant grind CPB tomorrow before smoking.......
