Butt Question

I noticed that on shows featuring BBQ competitions, such as Memphis in May, the picnic portion of shoulders are trimmed except for the end where the leg starts. All the teams did this. Is there a particular reason? I've always trimmed the whole thing.
 
I think it's just more tradition than anything else. Plus I happen to like a bit of smoked skin!

I'm not to the point where I gotta be worried about MIM yet tho ;{)
 
I always assumed it was just for presentation since that is a real big deal in MIM.......presenting the whole shoulder with the skin on the picnic portion, but pulling the eats out of the butt portion.

Just a guess. I haven't done a comp outside of the FBA.
