I was asked to do some pulled pork for a work day event at our church. So of course im gonna do it. Any reason to fire up the smoker is a good reason right? Started 2 shoulders last night about 1900. Coated with rub and smoked with pecan between 225-250. rubbed and ready to go GOSM was going strong and holding steady. At 2hrs I added some wood, spritz'd with AJ, and added a coating of rub. Checked it every 2 hours after this. I was expecting to foil at 0400 but it was still only in the 150 range. Its been a while since I had a shoulder take this long to get to foil. Finally at 0800 it was at 167. I did check the temps with my ET-72 and my Taylor weekend warrior and it was spot on so its just a difficult shoulder. Here it is at foiling. Added AJ to the pan and sealed. They are in the 170 range now so they should be done in no time. Should be some good eats. Ill post more pictures as the story unfolds. Thanks for looking.
