Well I decided to use the new plywood smoker to smoke some jerky. I used 2 kits from Hi Country and made 30 pounds (before smoking) of Inferno and Mandarin Terriyaki Flavor. The smoker ran perfect, I ran hickory smoke on it for 3 hours at 150 degrees and finidhed it for anther 7 hours with no smoke at 150. I like mine a little on the dry side and this was just that. It does not break when bent but it cracks....The Inferno was hot as I like it and I dont it in the beef the other was sweet and used the deer. Heres the pics...Git 40 pounds of snack sticks and 10 pounds of Summer Sausage on now

man you dont mess around when you do " a batch". thats some great looking jerky. do you use a meat slicer? thats next on my list, along with a grinder, mixer, stuffer, oh boy i better get back to work soon lol.

Man oh Man chris that is some really good looking jerky there. I love that stuff to. I have to make some this week end for a special trip to some of our soldiers in IRAQ some where in Bagdad camp Liberty.

I am on my third look at this thread and finally I am not dooling so much and can type..... Good looking grind and noce finish..
