OK, since these are going to get grilled with the onions, etc anyway I'll prolly pull at 135-ish. Rest 'em and then the grilling should finish them off nicely.
Billy, thanks for the reminder on the avacados. The wife's already said she's whipping those up for us, so yes, they're in.
Dude, it depends on what I'm cooking. For smaller cuts usually 1 hour does it on my WSM. However for larger cuts or something I know is gonna take a while I pop in...
So I have seven pounds of flank steak sitting in my cooler and I'm planning on making fajitas out of them Saturday. However, things aren't that simple, of course not. I wanna smoke the meat. Never done it this way before.
Now, first off I have a question: Anyone recommend a really great...
I'm planning on building a horizontal reverse flow this summer. I want to place a vertical smoker box on the end opposite the fire box. My question is: How should I go about constructing a damper to close off smoke-flow to the vertical section? Any chance someone would have a pic to link for me...
So I just finished up about 3 hours of labor to produce a set of decent looking hot dogs. Used the recipe out of the Chartucerie. They smell great and are gonna taste great, however...
My Kitchenaid mixer was a PAIN to use as a stuffer. Let me tell you why. The meat grinder attachment (which...

In all that time I've never noticed any off-flavors or other 'strangeness' at all. Just...
It's a steel tank water heater. I'm pretty sure there will be a fiberglass liner on the inside (we'll find out tomorrow when I cut into it) but that should come down pretty easy I believe. So now that the confusion (and major fireworks!!) are out of the way...
Any leads on info about building...
Hey all, thanks for the warm welcomes. I'm from Bentonville (actually lovely Bella Vista just on the state line) and it's getting ready to be really really pretty around here as soon as things green up.
Yeah, Lazy is a good name. But it's lazy in a roundabout way. Once I actually spent 2 months...
Anyone know of any threads/websites that talk about building a smoker from scratch? If not I may have to put one up.
A friend of mine recently replaced his water heater and gave me the old one. I'm going to pull the tank out of the shell and insulation and tear into it tomorrow. If anyone has...
Hey folks, just getting acquainted with the forums here. I'm a project manager for a major retailer, father and husband and full-time smoker.
I got started last year with a WSM Bullet that I fell in love with. I've smoked hundreds of pounds of meat with it since I've gotten it all to rave...
