Hey all, this is my first post in years, not sure why I haven't been posting here, been smoking meat every chance I get. Had my Highland going today smoked an elk shoulder roast and beans. Turned out very tasty.
Ok sorry for the late finish, my wife and kids went out of town with the camera.
Unfortunately when I brought the meat to my buddies house and started cutting people fell into it like ravenous wolves so I didn't get any sliced pics, but the tenderloin did melt in the mouth.
Here's another peek, just before I mopped the roast for the first time, gonna check temps in about 1/2 an hour or so, should be getting close to prep time for the tenderloin!!!

Decided to smkoe up some deer today.
First part of the smoke is a roast that marinaded overnight, got rubbed down witha homemade sweet and spicy rub abd is smoking over hickory.

MMM I love smoking deer meatloaf, did my first one witha mix of beef and deer, and everyone that ate it thought it turned out great. Since then I add tomato soup into the meat, works for me

Ok this may sound strange but I like to use Root beer in a marinade for my deer, I use about two cups add a cup of brown sugar , salt, fire roasted garlic and jalapenos and let it sit over night in the fridge, then I make a brown sugar rub with seasoning salt (a vitamin in my house) chili powder...
