Ended up picking up a NY strip roast. After taking some recommendations on cooking method I decided to cut it into thick steaks.
After that I kept two out to dry brine in salt and in the fridge for a few hours and packaged two other for the freezer. Also used the little end piece for some steak and eggs in the morning
Here they are after sitting in the fridge, then seasoned up
On to the kettle with some hickory chunks
Then topped with some homemade garlic butter and cut, was cooked just a tad too long for me but it was still pretty good
