Venison Sticks

Wife and I ground up venison, pork and some fat for some sticks.

Just a tad over 10lbs.

Going in fridge overnight, mix up tomorrow.

Dont know what flavor yet. Our GA daughter will be up next month, said you want sticks of chubs.....Sticks please.
 
Weighed out in 5lb batch.

First is BBQ flavor.

Small 1.5 lb Apple, pepper jack.

Fridge all for day or so before stuffing.
Need to get those pallets apart so I can start building smokehouse.
 
Stuff and hang day.
Hang at room temp from 2-4 hours then in smoker at 130* for couple hours then ramp up the temp and time.

On the left is the cheddar apple/pepperjack. Right is the mild flavor.
My wife is the stuffer operator, she said make them small. Ya know small takes up more space on the pole...EH

Try to cut and vac seal tomorrow....Sad day today as our 10 yr old shih tzu passed.
