Juicy meat when stuffing

So I tried my first ever batch of sticks this weekend. I used the Big Casino recipe I found here. Followed the recipe exactly. I mixed up the meat and put it in the fridge. I was going to let it set overnight and stuff then smoke in the morning. Then I started reading about the meat possibly being hard to stuff after it sits, so I got out my DIY stuffer and started filling casings. For about every single stick I filled, I got this juice squeezing out with it. The sausage seemed to just push it all the way out of the casing. There wasn't any excessive liquid in the sticks. And they ended up finishing just fine.

Any ideas? I've never seen this in any sausage making vids. And like I said they tasted great, good snap and texture.
